Okay so I won't bore you with all of my pics from Costa Rica, so I just posted a few. I took more photos of are resort then anything else. We had a video camera to use when we went out on our outdoor adventure so I don't have many photos for that day.
Okay so now for a full recap of our vacation. To be honest with you, Costa Rica was not all that we expected it to be. I think it might have been more our fault by just going to a travel agent and assuming everything would be great. I mean, our agent told us all the wonderful things we would be able to do...waterfalls, scuba diving, volcano watching, etc. What he failed to tell us was that all these activities were about at least an hour and a half away from our resort...and with the roads being incredibly bumpy it could take more than that to get to our location. He also claimed the weather to be sunny and hot. It rained every single day, if not all day...the down pours, and I mean tropical storms would come around 1:00 at the latest.
Here are some of the pros and cons of our trip to Costa Rica
Pros: Unlimited drinks and food of any choice (large buffet full of fresh fruit and veggies with fish and meat)
Large pool with a swim up bar and professional photographers to take your pictures
Unlimited bar in our room-drinks restored when asked
Cute little shops in our resort area and prices were reasonable-except for the sunscreen...22 bucks!!
Room was very comfortable with huge queen bed and a good view
Lots of agents available on site if you wanted to leave the resort to do an activity
Huge beach in walking distance with kiaking available for free
Cons
The unlimited drinks were very scarce, not much to choose from and not to sound prissy but the wine was horrible and the rum made me sick to my stomach one night
No ATM machines anywhere in the resort, the only way to get cash would be to schedule a drive to the nearest beach 45 minutes away, but in order to pay for that you had to have cash!!
Rained every single day if not half day all day
If we called down for service, it would take at least two hours for them to get back to us
The roads were bumpy and sometimes randomly they would close and we would be stuck for 45 minutes
Barely anyone spoke English or understood what you were saying (I know you should expect this in another country but I still got annoyed)
The only shows at night were for kids, the adult shows did not come on until around 11pm and they were mostly Costa Rica girls showing off their bodies in very obscene ways-plus everything was in Spanish
So basically was the trip for us...not really. Craig and I are more about adventure and seeing things then staying in the hotel drinking and eating all week. We did go on one adventure..horse back riding/zip lining and visiting a spa. It was run except for the fact that it pored rain on us the entire time so we were soaked. Needless to say, we were both very happy to be returning home to the states.
Workout wise, I was able to get in about 4 good cardio workouts and managed a three mile run around the resort one morning when the gym was not open on time. Yesterday I returned and knocked out an amazing p90x arm and shoulder workout with some elliptical work. Then....TRAVELER'S DIARRHEA. That is what I am guessing it is. It hit yesterday afternoon and I have been feeling awful since. Every half hour or so something nasty seems to be coming out of me. So yes, I skipped the gym today and am hoping to feel a little better by tomorrow. All in all, we learned our lesson..do our research before leaving the country again!

Engaged!!

I have never been happier to return to the states and officially say I am engaged!! I have more to come regarding Costa Rica and will give a full report of how our vaca went, but this post is dedicated to my engagement. We arrived on Monday to Costa Rica. Craig and I have been looking at rings previously and I had a hint or more of a hope that this vacation would be the one. Well on Tuesday we were lounging by the pool and Craig had asked me to search through his bags in search of his sunglasses. Once up in our room I figured there would be no way he was going to purpose if he had me looking through all his bags.
Tuesday night we went to dinner at one of the Steak House restaurants in our resort. While eating dinner Craig kept asking me to see my hand. I did not think anything about it, I was more worried about when my food would be served because my head was a little loopy from the wine. I had my camera on the table and Craig had grabbed it and said it was important that he hold on to it so we don't lose it. Minutes later, Craig said he had to go to the bathroom. I was busy stealing his tomatoes from his plate when all of a sudden, a waiter stood before me with a camera. I turned around and Craig got down on one knee and tears filled his eyes, the famous question popped out of his mouth and I of course said yes. I could not have asked for a better proposal.
As you can see from this picture I was pretty ecstatic from the proposal. I am very happy with what is to come. We have talked about dates and places, and we are both considering a destination wedding sometime next July. I feel as if a year might be long for an engagement, but on the other hand, between his busy season with his job and my job the summer is the only time that might work. Are other option was the month of Feb. but I was a little hesitant with it being to close and not having enough time to plan. I really don't want to become stressed out about it.

Finally, my ring!!
Well I am off to catch up on reality, tons of laundry, groceries and getting ready to go back to teach a week of Summer Camp. I will be back with a full recap of Costa Rica! If anyone has any experience with destination weddings I would love to hear all about it!!

Yoga Makes Me Sore

I awoke this morning sore and stiff...thank goodness today's workout just consisted of p90x yoga. Wrong! Just...ahem yeah right. I did some light cardio for 20 minutes on level two on the bike to warm up my legs. If you did not know, p90x Yoga is an hour and a half long. The first try at it I made it through 30 minutes, this time an hour. I was pooped when I got home, and it sure did not help my sore muscles, all the lunges and downward dogs just put more stress on my joints..I probably would have been better off just taking a rest day. Anyways, when I returned home I had some greek yogurt with peanut flour with almonds.
Around noon I made a delish lunch of leftover salmon on top of some veggies with a side of cottage cheese and a bagel thin. I then headed off to get my hair done and meet with my Mom for some coffee and chit chat.
When I returned home I was overjoyed to find Cooper jumping up to greet me. As I looked down at him, I noticed something was not right. His whole eye was swollen and his nose was real puffy. I grabbed the leash and once again we were off to the vet. Turns out Cooper just had a bad allergic reaction to the meds he was given. The doc gave him a shot to help the swelling go down. I managed to snag a picture of him after the vet, you can still see some of the swelling.
This poor little guy has gone through so much in the past few days. Did I tell you last night when he was home Craig and I found 5 ticks in him! I can't believe it, and we have not a clue where he picked them up from. He is a house dog, we do know that their is a huge bushy hill outside by the vet where they take the dogs to go out so I am wondering if that is where he was picked up. Okay enough Cooper talk...just glad once again he is okay.
So I am curious to know if any of you are Yoga doers what your favorite poses are. Right now I am liking the easy poses...

I am hoping to continue and get stronger each time. I love all the lunges, and I can feel the burn in my legs when holding them for a while.

WIAW

First off the good news, I picked up Cooper from the vet around 4 and he was good to go. I have never been so happy!! The vet gave us four bottles of meds for him to take along with a huge bag of special dog food that is easy on his stomach. The meds have made him a little sleepy, but I can tell my old Cooper is back. It is so nice to have him at home again. It is amazing how just a pet can make you feel. In no random order here are some of my eats from today! Hope you had a great Wednesday!!
Salmon for lunch with a side of cottage cheese and a bagel thin (not pictured)
Breakfast consisted of Carrot Cake yogurt mixed in oats with Cinnamon Protein powder and a sliced apple
After a hard Insanity workout followed by P90x Ab Ribber I was famished. I devoured two rice cakes topped with carrot cake yogurt, jelly and frozen peanut flour alongside a protein shake. The combination may sound gross, but it was wonderful to me!!

I managed to find these chicken breast shoved in the back of my freezer so I grilled them up and tossed them with some Stir Fry vegetables and soy sauce with green beans for dinner.
What made your Wednesday so yummy??

Poor Cooper

Today was a horrible start, well really in all honesty it started last night. Craig and I awoke several times to find poor Cooper having things come out of both ends if you know what I mean. About every hour I was awaken by either a smell or a sound of him releasing something and up I went to clean up the mess. Eventually we put him in the bathroom after he managed to go everywhere on the carpet. As soon as morning hit, Cooper was not getting any better and we could see blood in his vomit. We immediately took him to the vet. After hours had gone by, finally I received a phone call that told me Cooper had a parasite. The poor guy is at the vet and staying there overnight. I have been worried sick all day over him, and even managed to spill several bouts of tears when looking at his toys laying around are apartment.
The doc at the vet said Cooper is reacting really well to the medicine and he will now more tomorrow by noon when they do more lab work on him. I am unsure how to take this news, I keep thinking positive and that the doc would tell me if something were seriously wrong with him. I feel so bad for the little guy, how he got this bug we are unsure of. I know for one thing it will be a LONG night of hoping for Cooper's strength to shine through to help him survive.
Cooper and my Mom on Friday
Cooper and I on Friday at my parents house
Grocery shopping today, I managed to snag some of these little wonderfuls up. They are called "Ice," and they come in all flavors such as Lemon Lime, Blackberry Pomegranate, Grapefruit, etc. I love them and even better they were 10 for 10! I added a taco with the drink, and yes YIKES I used a white flour tortilla and not whole wheat. Craig had them left over from tacos last week, and I figured I would try to use them up.
My workout for the day was pretty much a blur. I was so concerned about Cooper and was awaiting the phone call from the vet so I kept looking at my phone while I was on the TM. I managed to knock out a speedy 4 miler (thank you beer this weekend from all the excess carbs you have given me to help me run faster lol) and finished off with P90x Arms and Shoulders workout.
Have you ever had a pet that became very ill, how did you deal?
Do you always stick to whole wheat or do you step outside of the healthy box and enjoy white floured products as well??

Happy 4th of July! I can officially say I am tuckered out and so glad to be home after a long, long weekend. My camera batteries died this weekend, we made a trip out to one of are friends lake houses in North Platte, and the nearest gas station was quite a few miles away...and honestly we were so busy having so much fun I forgot. We started out on Saturday morning and drove most of the afternoon. Saturday and Sunday were spent on Jet Skis, boats, and yes enjoying many adult beverages.
After some long nights of drinks we hit up the local Amigo's for some good late night fast food.
We headed back this afternoon, and I tried my best to keep my diet fresh from the past few days of poor food choices with adding a good old subway sandwich to my diet.
Craig and I had a wonderful weekend seeing alot of our friends that we have not seen in over several years. Holiday weekends are so much fun, but at the same time they can sure be wearing. When I was younger, I could go for weekends on end staying up late and getting crazy. Anymore, the older I get the toll it really takes on my poor body. Two days off from the gym eating healthy, means tomorrow I will be ready to return strong and freash!!
How was your 4th of July weekend?
